Red Potato Artichoke Salad
I was messing around today and created a recipe that I'm sure already exists, but it was a new creation for me.
I had artichoke hearts, which I love, in the pantry and I wanted to do something with them. I started rooting through my cupboards and just started pulling out ingredients and ended up with a red potato salad with marinated artichoke hearts.
I wanted to put blue cheese crumbles in it but I don't have any, so here's what's in it. It turned out to be exceptionally tasty:
Red Potato Salad with Marinated Artichoke Hearts
Red Potatoes (the number depends on how much you want to make. 3 lbs is good but I only used about 8 or 9 small ones)
1 can or jar of artichoke hearts, drained
2 tbsp dill
1 tbsp dijon mustard
4 1/2 tbsp cider vinegar
6 tbsp extra virgin olive oil
1 tsp sea salt
Fresh milled black pepper to taste
Optional:
Blue cheese crumbles, 1 tsp honey
Directions
Boil the red potatoes until cooked through.
Mix the olive oil, cider vinegar, dijon mustard, salt, pepper and dill in a mixing bowl and whisk ingredients together. Add chopped artichokes (halved or quartered, depending on your preference) and the cooked potatoes (halved or quartered) to the dressing.
Cover and chill. Eat. Be happy. Take nap.
